Description

For the Crispy Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Olive oil for frying

For the Creamy Pasta:

  • 8 oz pasta (penne or fettuccine work great)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1️⃣ Prepare the crispy chicken coating: In a shallow bowl, combine the breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and pepper. Mix well and set aside.

2️⃣ Coat the chicken: Dip each chicken breast into the beaten eggs, ensuring it’s fully coated. Then, dredge the chicken breasts in the breadcrumb mixture, pressing gently to ensure an even coating on both sides.

3️⃣ Fry the chicken: Heat a generous amount of olive oil in a large pan over medium heat. Once the oil is hot, carefully add the chicken breasts. Cook for about 5-6 minutes per side, or until golden brown and crispy, and the internal temperature reaches 165°F (75°C). Remove the chicken from the pan and set it aside on a plate.

4️⃣ Cook the pasta: While the chicken is cooking, bring a pot of salted water to a boil. Add the pasta and cook according to the package instructions. Drain and set aside.

5️⃣ Prepare the creamy sauce: In a separate pan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, making sure not to burn the garlic.

6️⃣ Make the sauce: Slowly pour in the heavy cream, stirring constantly. Bring the mixture to a simmer, and then stir in the grated Parmesan cheese. Continue to cook for 2-3 minutes until the sauce thickens to your desired consistency.

7️⃣ Season and combine: Taste the sauce and season with salt and pepper. Once the sauce is thick and creamy, add the cooked pasta, tossing to coat the noodles evenly in the sauce.

8️⃣ Serve and garnish: Plate the creamy pasta and top it with the crispy chicken. Garnish with fresh parsley for a pop of color and added freshness.

Notes

  • If you prefer, you can make the crispy chicken in the oven for a lighter version. Place the breaded chicken breasts on a baking sheet lined with parchment paper and bake at 400°F (200°C) for 20-25 minutes, flipping halfway through.
  • For an extra creamy sauce, add a little bit of cream cheese or mascarpone in place of part of the heavy cream.
