Brownie Ingredients
- 1 stick (1/2 cup) unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons coffee extract or 1 tablespoon instant coffee
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
Coffee Frosting Ingredients
- 1 1/2 teaspoons instant coffee granules
- 2–4 tablespoons heavy whipping cream
- 1/3 cup unsalted butter, softened
- 2 cups powdered sugar
Instructions
1️⃣ Preheat Oven and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Prepare an 8-inch baking dish with non-stick spray or line it with parchment paper and spray with non-stick spray.
2️⃣ Make the Brownie Batter: In a microwave-safe bowl, melt the butter in the microwave. In a large mixing bowl, combine the melted butter, sugar, eggs, and vanilla, stirring until well combined. In the same bowl, add the coffee extract (or dissolved instant coffee), cocoa powder, flour, salt, and baking powder. Mix until just combined.
3️⃣ Bake: Spread the brownie batter evenly into the prepared pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
4️⃣ Cool the Brownies: Allow the brownies to cool completely in the pan before adding the frosting.
5️⃣ Prepare the Coffee Frosting: Dissolve the instant coffee granules in 2 tablespoons of heavy cream and set aside. In a large mixing bowl, beat the softened butter until light and fluffy. Gradually add the powdered sugar, mixing until well combined. Add the coffee-infused cream to the frosting mixture, starting with 2 tablespoons and adding more, 1 tablespoon at a time, until you reach your desired frosting consistency.
6️⃣ Frost and Serve: Spread the coffee frosting evenly over the cooled brownies. Slice and enjoy!
