Description

These delightful no-bake Pineapple Christmas Balls are a festive and sweet treat that’s perfect for the holiday season. The combination of crushed pineapple, graham cracker crumbs, shredded coconut, and powdered sugar creates a moist, flavorful base, while a coating of additional coconut adds a crunchy, tropical touch.

Ingredients

Scale
  • 1 can (20 oz) crushed pineapple, well-drained
  • 1 cup graham cracker crumbs
  • 1 cup shredded sweetened coconut
  • 1 cup powdered sugar
  • ½ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Additional shredded coconut (for rolling)

Instructions

1️⃣ Mix the pineapple base: In a large bowl, combine the well-drained crushed pineapple, graham cracker crumbs, shredded coconut, powdered sugar, softened butter, and vanilla extract. Stir until everything is well mixed and forms a sticky dough-like consistency.

2️⃣ Shape the balls: Scoop out about 1 tablespoon of the mixture and roll it into a small ball using your hands. Repeat until all the mixture is used up.

3️⃣ Roll in coconut: Roll each ball in additional shredded coconut, ensuring each one is fully coated.

4️⃣ Chill: Place the pineapple balls on a parchment-lined baking sheet and refrigerate for at least 1 hour, or until firm.

5️⃣ Serve: Once firm, transfer the Pineapple Christmas Balls to a serving dish and enjoy!

Notes

  • If you prefer a lighter texture, you can add a little more graham cracker crumbs.
  • For an added festive touch, sprinkle some colorful sprinkles along with the coconut when rolling the balls.
  • These can be stored in the fridge for up to a week.
