Ingredients
- 2 (3.4 oz) boxes instant vanilla pudding mix
- 2 (20 oz) cans crushed pineapple in juice (do not drain)
- 8 oz tub Cool Whip
- 10 oz bag mini marshmallows
- 1 ½ cups shredded coconut
- 1 cup chopped pecans, plus extra for topping
Instructions
1️⃣ In a large mixing bowl, combine the instant vanilla pudding mix with the pineapple (with juice) until smooth and no streaks remain.
2️⃣ Gently fold in the Cool Whip until fully incorporated, being careful not to deflate it.
3️⃣ Add the mini marshmallows, shredded coconut, and chopped pecans, folding them into the mixture.
4️⃣ Refrigerate for 2-4 hours to chill.
5️⃣ Before serving, top with extra pineapple, pecans, marshmallows, and coconut for garnish if desired.
