Sausage, Egg, and Cheese Breakfast Roll-Ups

  • Author: BENARDI
  • Total Time: 25–28 mins

Description

These Sausage, Egg, and Cheese Breakfast Roll-Ups are a quick, delicious, and portable breakfast option. Made with fluffy scrambled eggs, savory sausage, and melty cheese, all wrapped in a buttery crescent roll, they’re perfect for busy mornings or a special weekend treat.

Ingredients

Scale
  • 5 large eggs, divided
  • 1 can (8 oz) Pillsbury™ refrigerated crescent dinner rolls
  • 8 sausage links
  • 4 slices Cheddar cheese, each cut in half
  • Salt and pepper to taste

Instructions

1️⃣ Preheat the Oven: Preheat your oven to 350°F (175°C).

2️⃣ Prepare the Eggs: In a small bowl, beat all 5 eggs. Set aside 2 tablespoons of the beaten eggs in a separate small bowl (you’ll use this for brushing on the crescent rolls). In a skillet over medium heat, scramble the remaining beaten eggs until just cooked. Set aside.

3️⃣ Prepare the Crescent Rolls: Unroll the crescent roll dough on a clean work surface and separate it into 8 triangles. Place half of a cheese slice onto each triangle.

4️⃣ Assemble the Roll-Ups: Spoon a small amount of scrambled eggs onto each triangle, on top of the cheese. Place one sausage link on each triangle as well, and carefully roll each one up from the wide end toward the point.

5️⃣ Brush and Season: Place the roll-ups on an ungreased cookie sheet, spacing them evenly. Brush the tops of the roll-ups with the reserved 2 tablespoons of beaten egg, then sprinkle with salt and pepper to taste.

6️⃣ Bake: Bake for 15–18 minutes, or until the roll-ups are golden brown and cooked through.

7️⃣ Serve: Let cool slightly, then serve warm for a perfect grab-and-go breakfast!

Notes

  • Customizable Fillings: Feel free to add extras like diced bell peppers, green onions, or spinach to the scrambled eggs for more flavor and nutrients.
  • Cheese Options: Cheddar works well, but you can also try Swiss, American, or Pepper Jack for a different flavor profile.
