  • Total Time: 55 mins

Description

A simple and comforting casserole featuring tender green beans, hearty potatoes, and creamy cheese. This dish is perfect for a weeknight dinner or as a side for holiday gatherings.

Ingredients

Scale
  • 2 (15-ounce) cans diced potatoes, drained
  • 2 (14-ounce) cans green beans, drained
  • 1 pound shredded Colby cheese
  • 1 (10.5-ounce) can condensed cream of chicken soup

Instructions

1️⃣ Preheat the oven: Set your oven to 350°F (175°C). Lightly grease a small casserole dish with cooking spray or butter.

2️⃣ Combine the ingredients: In the prepared casserole dish, mix together the diced potatoes, green beans, shredded Colby cheese, and condensed cream of chicken soup until everything is evenly combined.

3️⃣ Bake covered: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

4️⃣ Bake uncovered: Remove the foil and continue baking for an additional 15 minutes, or until the casserole is bubbly and the top is lightly browned.

5️⃣ Serve: Let the casserole cool for 5 minutes before serving. Enjoy it warm as a comforting side or main dish!

Notes

  • Cheese alternatives: Swap Colby cheese with cheddar, Monterey Jack, or a cheese blend for a different flavor profile.
  • Optional add-ins: Add crispy bacon bits, sautéed onions, or a sprinkle of garlic powder for extra flavor.
  • Vegetarian version: Substitute the cream of chicken soup with cream of mushroom or cream of celery soup.
  • Make ahead: Assemble the casserole up to a day in advance and refrigerate. Bake just before serving.
