Description

Sausage Hash Brown Breakfast Casserole is a hearty, flavorful dish perfect for feeding a crowd or meal-prepping for busy mornings. Featuring layers of crispy hash browns, savory sausage blended with creamy cheese, and a fluffy, seasoned egg mixture, this casserole is topped with melty cheddar for the ultimate breakfast indulgence.

Ingredients

Scale
  • 1 bag frozen shredded hash browns (3032 oz)
  • 2 lbs hot breakfast sausage
  • 16 oz cream cheese, room temperature
  • 8 eggs
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder

Instructions

1️⃣ Preheat the oven: Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish with cooking spray or butter.

2️⃣ Cook the sausage: In a large skillet, cook the sausage over medium heat until browned and fully cooked, about 7-10 minutes. Break the sausage into crumbles as it cooks. Drain any excess fat and set the sausage aside.

3️⃣ Combine with cream cheese: While the sausage is still warm, stir in the cream cheese until it’s fully incorporated and the mixture is smooth and creamy.

4️⃣ Prepare the egg mixture: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined and smooth.

5️⃣ Assemble the casserole: Spread the frozen hash browns evenly across the bottom of the greased baking dish. Layer the sausage-cream cheese mixture on top of the hash browns. Pour the egg mixture evenly over the top. Sprinkle the shredded cheddar cheese over the entire casserole.

6️⃣ Bake: Place the casserole in the preheated oven and bake for 45-50 minutes, or until the eggs are set and the cheese is melted and bubbly. For a crispier top, broil for an additional 2-3 minutes at the end.

7️⃣ Cool and serve: Remove the casserole from the oven and allow it to cool slightly before slicing and serving.

Notes

  • You can substitute regular breakfast sausage or a mild version if you prefer a less spicy dish.
  • If you like a crunchy top, make sure to broil the casserole in the last few minutes.
  • This casserole can be made ahead and stored in the refrigerator for up to 2 days before baking, or frozen for up to 1 month. Just be sure to bake it fully from frozen (you may need to add a little extra time).
